Two cool bros are working it out in Chablis to make beautifully balanced wines. Jérôme works the vineyards, and Xavier makes the wines. All traditional, environmentally friendly, organic practices are used. They harvest later than most, ferment with natural yeast and age the wines in very large barrels. 

This vibrant wine is a knockout. The tart to ripe green and yellow apple offer a nose with a flinty appeal. It’s youthful and seductive with notes of cheese rind, slight savory herbs, and an oyster shell minerality. It is layered and complex with a long finish. We can definitely groove to this. Let the beat drop!
