Where do we begin? Organic grapes, great vineyards. Fabrice began to convert to biodynamic farming practices in 2003. He believes most of the work is meant to be done in the vineyard. Most parcels are vinified separately, to maintain a maximum diversity of terroir expression.

At first sight, the finely-beaded mousse is about as sexy as it gets. One generous whiff of the just barely ripe tree fruit, lemon zest and white flowers elevate the tasting experience. The palate is generous and complex. There is great balance between fruit and the high acidity. Ride the giant wave of chalky minerality. It spends 6-12 months aging in tank, barrel and bottle. It does undergo malo. Dosage is kept at 5g per liter. Each year this is a blend of crus from all of Pouillon’s holdings. The wine is is blended with the previous vintage and the "perpetual cuvée" to be refermented in bottle.

65% Pinot Noir, 20% Meunier, and 15% Chardonnay.
